Ingredients
- Half a cup of cooked quinoa or brown rice
- One cup of roasted seasonal vegetables
- One cup of fresh spinach
- 1/4 cup of cooked chickpeas
- ¼ cup of halved cherry tomatoes
- Feta cheese, crumbled (2 tbsp)
- 1 tsp of olive oil

Preparation Procedure
- Follow the package directions to cook brown rice or quinoa.
- Cook seasonal vegetables in the oven until they are soft.
- Put spinach in a bowl as the base.
- Put in some quinoa or rice, roasted vegetables, chickpeas, and cherry tomatoes.
- Add crumbled feta cheese on top, then drizzle olive oil and lemon juice on top.
- Add salt and pepper to taste and serve hot.
