  1. Follow the package directions to cook brown rice or quinoa.
  2. Cook seasonal vegetables in the oven until they are soft.
  3. Put spinach in a bowl as the base.
  4. Put in some quinoa or rice, roasted vegetables, chickpeas, and cherry tomatoes.
  5. Add crumbled feta cheese on top, then drizzle olive oil and lemon juice on top.
  6. Add salt and pepper to taste and serve hot.
